Scotch Tasting Trip

My wife and I are planning a scotch tasting/sightseeing trip to northern Scotland this fall for a week. I would appreciate any information on the subject as to accommodations, tour companies and tours, restaurants, distilleries, routes to take and or anything else you think would be helpful. Thanks
