I did the "Adriatic Adventure" with Eldertreks (www.eldertreks.com). It is a great 21 day itinerary a large part of which is spent in Croatia (www.eldertreks.com/tour/ETTD000228). It is a Canadian company and their demographic is tours for people over 50. At first their trips seem expensive, but absolutely everything is included except the tip to the guide. All meals are included including soft drinks and coffee/tea. Alcoholic drinks are extra, but in these countries they do not cost very much.
